Keep a core of contracted hotel and QSR volume. Fill the rest with marketplace spot lots. Dual pipeline is how you survive a city-level collection disruption.
Spec sheet that sellers understand
Write limits in plain language: maximum FFA, maximum water, no solvent smell, filtered preferred. Attach the test method if you use a lab. Sellers in kitchens are not chemists.
