Minimum columns
Date, oil purchased (litres), oil in fryers, TPC or hour count, UCO drum litres, collector name, invoice number, BioTradX trade ID.
Who fills it
Chef or stewarding for TPC. Manager for collector. Accounts for invoice. If one person owns all three, it still gets done on holidays.
Retention
Keep at least as long as your FSSAI and internal audit policy. Digital scans of invoices beat oil-stained paper.
Marketplace
BioTradX does not replace the kitchen log. It replaces the missing collector invoice.
